Roman Meal brings you a protein-packed lunch or light dinner option. Ingredients:
1 cup chopped cooked chicken breast |
1/4 cup low-fat caesar salad dressing |
1/4 cup finely diced red onions |
2 tablespoons shredded parmesan cheese |
1 tablespoon chopped fresh parsley |
2 slices roman meal bread |
6 leaves baby romaine lettuce |
6 cherry tomato halves (optional) |
Directions:
1. Combine chicken, dressing, red onions, cheese and parsley in small bowl. 2. Place 3 lettuce leaves on toast. Top each with 1/2 cup chicken salad. Garnish with tomatoes if desired. |
