This is from one of my favorite cook books with low fat healthy recipes. I make this at least three times a month for my family. Ingredients:
3 pounds chicken thighs |
1/2 cup thinly sliced onion |
1/2 cup cubed green pepper |
2 tbsp margarine |
1/2 pound fresh mushrooms |
2 cloves of garlic |
1 8 oz. can of stewed tomatoes |
1 8 oz. can tomato sauce |
1/2 cup red wine |
1 bay leaf |
2 tsp sugar |
1/2 tsp basil |
1/2 tsp thyme |
1/2 tsp oregano |
1/2 tsp salt |
Directions:
1. In a 3 quart saucepan, over medium heat, saute onion and green pepper in margarine until onion is transparent and pepper is tender. 2. Add mushrooms and garlic, cook 2 to 3 min. 3. Stir in tomatoes, tomato sauce, wine, and herbs. 4. Bring to boil. 5. Add chicken , reduce heat to low, cover and cook 1 1/2 hours. 6. Serve over spaghetti or rice. |
