Chicken Cacciatore Ingredients:
2 tablespoons olive oil |
8 chicken thighs, skin removed |
salt and pepper |
1 onion, chopped |
3 garlic cloves, grated |
1 carrot, peeled and finely diced |
1 (14 1/2 ounce) can crushed tomatoes |
1/2 cup dry red wine |
1 bay leaf |
1/2 teaspoon dried oregano |
1/2 teaspoon dried basil |
1/4 teaspoon pepper |
Directions:
1. Add oil to a large Dutch oven and heat over high heat. Season thighs with salt and pepper and add to the dutch oven. Saute and brown on both sides, about 4 minutes per side. Remove chicken. 2. Add onion, garlic, and carrot and cook for a few minutes until the onion becomes translucent. 3. Return chicken to Dutch oven and add remaining ingredients. Bring to a boil, reduce heat, cover and simmer for 20 minutes or until chicken is cooked through and fork tender. |
