Classic Chicken Cacciatore. Chicken, tomatoes, green peppers and mushrooms. Ingredients:
2 tablespoons oil |
1 lb extra thin sliced roaster chicken breast, cut into cubes |
2 tablespoons oil |
2 teaspoons minced garlic |
1/4 cup frozen chopped onions |
1 green pepper, cut into big chunks |
1 (8 ounce) package fresh mushrooms, sliced |
1 (14 1/2 ounce) can diced tomatoes, in sauce |
1/4 cup white wine |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 (12 ounce) package fettuccine, cooked according to directions on package |
Directions:
1. In a skillet brown chicken breasts in 2 tablespoons oil. Set aside. 2. Brown garlic and onions in second 2 tablespoons of oil in a saucepan(use bigger saucepan). 3. Add peppers and mushrooms to garlic and onions. Cook until they are a little soft. 4. Add tomatoes, wine, salt and pepper. Bring to a boil. 5. Add chicken to tomatoe sauce. Simmer for 15 minutes. 6. Pour tomatoe sauce mixture over pasta. |
