Another Home Economics course recipe. Easy to make it as spicy as you like by adjusting the amount of cayenne pepper. Makes a nice meal served on rice, especially during our winter months! Ingredients:
1 kg boneless skinless chicken thighs, cut into cubes |
3 tablespoons oil |
1/2 onion, chopped |
6 tablespoons green peppers, minced |
2 garlic cloves, minced |
14 ounces canned tomatoes |
1/4 teaspoon thyme |
1/2 cup tomato sauce |
1 teaspoon salt |
1/4 teaspoon pepper |
1/4 teaspoon allspice |
1 bay leaf |
cayenne pepper |
Directions:
1. Heat oil in a frying pan. Fry chicken until no longer pink. 2. Add onion, green pepper and garlic. Brown lightly. 3. Add remaining ingredients. Simmer uncovered 30 minutes. 4. Serve with rice or pasta. |
