Here is a classic chicken casserole you could make after a trip to the market any given Saturday. Ingredients:
2 tablespoons canola oil |
1 chicken, cut into pieces |
salt and pepper |
1 medium onion, chopped |
1 green pepper, sliced |
2 garlic cloves, chopped |
1/2 cup dry red wine |
1/3 cup chopped herbs (such as rosemary, sage, thyme, oregano, parsley) |
10 ripe tomatoes, chopped |
1 cup mushroom, chopped |
hot cooked pasta (of your choice) |
Directions:
1. In a heavy pot, heat the oil on mediun high. Pat the chicken dry with paper towel, sprinkle with salt and pepper and brown on all sides. Using tongs, remove chicken and set aside. 2. Add onions, green peppers and garlic to the pot. Sauté until soft, stirring frequently,. Pour in the wine. Simmer until the wine evaporates, scraping up any brown bits on the bottom of the pan. 3. Return the chicken to the pot along with the herbs, tomatoes, and mushrooms. 4. Add enough water to almost cover the chicken. Bring to a boil, then cover the pot, reduce the heat and simmer for 2 hours. 5. Remove the lid and continue simmering until the sauce is thickened and rich in color. 6. Taste and add more spice or herbs as needed. 7. To serve, it's customary to spoon the sauce onto pasta and place 2 pieces of chicken on the side. |
