This is a low-fat version of chicken cacciatore. Enjoy! Ingredients:
1 boneless skinless chicken breast |
1/2 cup diced tomatoes with juice |
1/2 teaspoon olive oil |
1/4 teaspoon salt |
1/4 white onion, sliced |
1 garlic clove, minced |
1 teaspoon dried basil |
1/2 teaspoon dried red pepper flakes |
1 teaspoon oregano |
1/4 cup white wine |
Directions:
1. Season chicken with salt and pepper. Heat the oil and brown chicken over medium heat, 2 minutes on each side. 2. Transfer chicken to a plate and set aside. Add remaining ingredients to skillet and simmer for 5 minutes. Return chicken and juices to skillet, spoon sauce over chicken. Cover and simmer for an additional 2 minutes or until chicken is tender and cooked through. |
