A zesty alternative to plain spaghetti sauce. Ingredients:
2 tablespoons butter or 2 tablespoons margarine |
4 boneless chicken breasts, cut in half |
1 medium onion, chopped |
2 cloves garlic, minced |
1 green bell pepper, chopped |
1 (14 1/2 ounce) can undrained stewed tomatoes, chopped |
1/4 cup chicken broth |
1 1/2 teaspoons italian seasoning |
1/2 lb spaghetti |
Directions:
1. Heat butter in skillet over medium high heat. 2. Add chicken. 3. Saute' 3 minutes on each side. 4. Remove chicken. 5. Drain all but 2-3 tbs of drippings. 6. Add garlic, onion, and bell pepper to skillet. 7. Saute' until tender, about 4 minutes. 8. Add undrained tomatoes, broth, and italian seasoning. 9. Return chicken to skillet. 10. Cover and simmer for 25 minutes, or until chicken is tender. 11. Bring large pot of water to a boil. 12. Cook pasta according to directions and drain well. 13. Place pasta in large serving bowl and spoon sauce and chicken over top. 14. Serve. |
