* Cooking time includes cooking the brown rice using quick cooking brown rice. Ingredients:
3 boneless skinless chicken breasts, cut into strips |
1 teaspoon olive oil |
3 cups green cabbage, sliced into strips |
1 tablespoon cornstarch |
1/2 teaspoon ground ginger |
1/4 teaspoon garlic powder |
1/2 cup water |
1 tablespoon soy sauce |
4 cups brown rice, cooked |
Directions:
1. Cut chicken breasts into strips. 2. Heat oil in frypan. Add chicken strips and stirfry over moderately high heat, turning pieces constantly, until lightly browned (about 2-3 minutes). 3. Add cabbage; stirfry 2 minutes until cabbage is tender-crisp. 4. Mix cornstarch and seasonings; add water and soy sauce, mixing until smooth. 5. Stir into chicken mixture. 6. Cook until thickened and pieces are coated, about 1 minute. 7. Serve over brown rice. |
