Simple, basic, nutritious chicken broth. excellent comfort food when not feeling very well :o) Ingredients:
4 pints stock, chicken - homemade |
2 carrots |
1 large potato |
1 medium onion |
1 cup peas |
3 tablespoons mint |
15 cherry tomatoes |
125 g split red lentils |
Directions:
1. Dice vegetables and combine in a pan with chicken stock and lentils that have been soaked overnight. Also add 250g of whitworths soup & broth mix (355 kcal per 100g). bring to the boil and simmer for 1 hour. |
