Chicken Broccoli Cordon Bleu Casserole |

While trying to stretch 4 chicken breasts to feed 6 people I came up with this recipe. I serve it with wild rice and a salad. Ingredients:
4 boneless chicken breast halves |
1 (16 ounce) bag cut-up frozen broccoli |
1 cup ham, diced |
4 ounces swiss cheese, diced |
1 (10 3/4 ounce) can cream of chicken soup |
1/2 cup white wine |
1 garlic clove, minced |
1 tablespoon butter |
salt, to taste |
pepper, to taste |
Directions:
1. Cut chicken breast into strips. 2. Saute garlic and chicken strips in butter in a non-stick skillet over medium heat until lightly browned. 3. Place broccoli in bottom of 2-quart casserole. 4. Lay chicken strips over broccoli. 5. Top chicken with diced ham and then swiss cheese. 6. In small bowl combine soup and wine and pour over chicken mixture in casserole. 7. Sprinkle with salt and pepper. 8. Place in a preheated 350 degree oven, uncovered, for 45 minutes. |
