Chicken, Broccoli and Rice divan

Yummy, healthy, and easy! Warm and Creamy.... Great for a cold day!
Ingredients:
2 boneless skinless chicken breasts (cubed)
1 1/2 heads broccoli
4 tablespoons dijon mustard
4 ounces reduced-fat cream of chicken soup
8 ounces 98% fat free broccoli cheese soup
1/2 cup skim milk
instant brown rice
Directions:
1. First, coat chicken with a pinch of salt and pepper and 2 tbsp of dijon mustard.
2. In a large skillet coated with nonstick cooking spray, cook cubed chicken over medium heat.
3. While chicken is cooking, steam broccoli.
4. Once the chicken is cooked on the outside (about 5 min) add the cans of soup and the milk.
5. Stir until clumps disappear.
6. Stir in the remaining dijon mustard.
7. Add the broccoli to the mixture.
8. Reduce heat to medium-low and let cook together for about 10 minutes.
9. Prepare rice according to the package.
10. Serve the mixture over top of the rice.
