Chicken, Broccoli and Cashew Stir-fry Ingredients:
3 cups broccoli florets (about 1/2 lb) |
2 large carrots, cut into thin slices |
5 oz soba noodles |
1 tbsp olive oil |
1 tbsp ginger, minced |
3 cloves garlic |
12 oz chicken breasts, boneless and skinless |
1 tbsp soy sauce |
1 tsp sesame oil |
3 scallions, thinly sliced |
1/2 cup chicken stock |
1/2 cup cashews, unsalted, lightly toasted |
Directions:
1. Bring a large pot of water to boil. Add broccoli, carrots and noodles. Cover and cook until vegetables are crisp-tender, 3 to 5 minutes. Drain and transfer to a bowl. 2. Heat olive oil, ginger and garlic in a wok or large skillet. Cook, stirring, until the garlic turns golden 1 to 2 minutes. Add the chicken, soy sauce and sesame oil. Stir-fry 4-5 minutes. Add scallions and stir-fry 1 minute longer. 3. Stir in noodles, stock and vegetables to heat throughout. Stir in cashews. |
