This brine will give you a moist, tender and flavorful chicken every time! This recipe is for a 3-4 lb chicken, cut into 12 pieces. Ingredients:
1/2 cup table salt |
1/4 cup sugar |
2 tablespoons paprika |
3 medium garlic heads, cloves separated |
3 bay leaves, crumbled |
7 cups buttermilk |
Directions:
1. In a gallon-size zipperlock plastic bag, combine the salt, sugar, paprika, garlic cloves and bay leaves. 2. With a rubber mallot, smash the garlic into the salt and spice mixture thoroughly. 3. Pour the mixture into a large nonreactive bowl. 4. Add the buttermilk and stir until salt is completely dissolved. 5. Immerse the chicken in the brine, cover with plastic wrap and refrigerate until fully seasoned, 2-3 hours. 6. Coat and fry the chicken. |
