Chicken Breasts With Cheese Sauce |

This is one of my son-in-law's favourite chicken recipes. This recipe can also be made 'lighter' for those on a low fat diet by using a low fat cheese and trim/light milk and frying in a non stick pan which has been lightly sprayed with cooking spray/oil Ingredients:
4 skinless chicken breasts |
2 egg whites |
1/2 cup plain flour |
1/4 cup dry breadcrumbs |
canola oil (for frying) |
8 teaspoons butter or 8 teaspoons margarine |
4 teaspoons plain flour |
1 cup milk |
1/2 cup cheddar cheese or 1/2 cup edam cheese, grated |
chopped parsley (for garnish) or chopped paprika (for garnish) |
Directions:
1. Combine the breadcrumbs and flour. 2. Lightly beat the egg whites with 8 teasp water. 3. Dip chicken in the egg white mix and then coat with the breadcrumb mix. 4. Heat a little oil in frying pan and brown chicken for about 5mins each side. 5. Place chicken in an oven proof dish and place in oven at 180. 6. C Bake for approx 15mins or until cooked through. 7. While chicken is in oven make sauce. 8. In a small saucepan melt butter and add flour. 9. Cook 1min. 10. over med heat. 11. Add milk and stir constantly until boiling. 12. Turn to low heat and simmer for 2mins still stirring. 13. Remove from heat and stir in 1/4cup cheese. 14. Place a chicken breast on each of 4 plates and pour over sauce. 15. Sprinkle with remaining cheese. 16. Garnish with parsley or paprika. |
