Chicken Breasts Stuffed With Artichokes, Lemon, and Goat Cheese |

You can stuff the chicken breasts and chill up to 4 hours before cooking ;] (Cooking Light) Ingredients:
1 1/4 tablespoons italian seasoned breadcrumbs |
1 teaspoon lemon zest |
1/8 teaspoon salt |
1/8 teaspoon pepper |
0.5 (6 ounce) jar artichoke hearts, drained and chopped |
0.5 (3 ounce) package herbed goat cheese, softened |
2 chicken breasts |
Directions:
1. Preheat oven to 375 degrees. 2. Combine the breadcrumbs, zest, salt, pepper, artichokes, and goat cheese in a small bowl. 3. Butterfly each chicken breast. After doing so, sandwich the chicken breasts between two pieces of plastic wrap and pound with a meat mallet or rolling pin. 4. Stuff each breast with the cheese mixture. 5. Place chicken in a baking dish, and bake for 30 minutes, or until done. |
