Chicken Breast in Orange Sauce for 2 |

Fresh orange juice & zest perk up the flavor of another dieters' ho-hum baked chicken breast. Ingredients:
2 (4 -6 ounce) boneless skinless chicken breast halves |
1 teaspoon fresh orange zest |
1/2 cup fresh squeezed orange juice |
1 tablespoon dry white wine |
1 tablespoon brown sugar |
1/2 teaspoon prepared mustard |
1/4 teaspoon ground ginger |
1 tablespoon cornstarch |
1/4 cup water |
Directions:
1. Preheat oven to 350°F. 2. Place chicken breast halves in a 1 quart baking dish. 3. In a small bowl, combine orange zest, orange juice, wine, brown sugar, mustard and ginger. Drizzle over chicken. 4. Cover and bake for 20-30 minutes or until chicken is no longer pink in center (180-190ºF on a meat thermometer). Don't overbake! 5. Remove chicken to serving dish, cover and keep warm. 6. Pour pan juices into a small saucepan. 7. In a small bowl, blend cornstarch & water till smooth. 8. Add to juices in saucepan and cook over low heat until it starts to thicken. 9. Spoon sauce over chicken and serve. |
