Chicken Boats at Apple Island |

A fun kids after school snack that I developed last year when my son went to Kindergarten. He would come home starving every day and boring granola bars just didn't cut it. This one is the favorite of my son and the neighborhood kids. I will post a picture the next time I make it as it looks so cool...and is fun to eat! Ingredients:
1 cup chicken, shredded |
1/4 cup shredded carrot |
1/4 cup corn |
2 tablespoons diced dill pickles |
2 tablespoons diced red bell peppers |
1/2 cup mayonnaise, light |
30 scoops tortilla chips (use as many as you need) |
30 carrots, matchsticks (i like using the baby peeled ones and cutting to size) |
1/4 cup cream cheese, plain and light |
2 tablespoons marshmallow cream |
2 teaspoons milk |
1 apple, sliced into thin wedges |
8 vanilla wafer cookies |
Directions:
1. Mix together the first 6 ingredients to make the chicken salad. Season with Salt and Pepper. Sometimes, my son likes to go out to the garden and pick out some Parsley or Thyme to add to the salad. 2. Make the boats by filling each scoop chip with the salad. Add one of the carrot match sticks as the mast for each boat, sticking straight into the air. 3. Mix together the cream cheese, marshmallow fluff, and milk. It should make a thick dip like consistency that will hold up the apples & cookies. Mound in the middle of a large Blue plate or serving tray. Add the apples and cookies on top of the mound in a creative way - to look like an island. Sometimes I even grind the brown cookies into sand sprinkling over the island. 4. Arrange the boats in around the island on the plate. 5. Serve to your kids and watch them have fun! |
