Chicken Blt Salad With Barbecue Dressing |

Here's a main dish salad with a little twist. Use cold chicken you've already cooked and bacon you cooked earlier or my favorite shortcut, precooked bacon slices, and you have a cool meal in no time at all. salad ingredients |
1 head iceberg lettuce, washed and chilled |
10 slices bacon, cooked crisp |
2 large tomatoes |
2 cups cooked chicken, cubed and chilled |
1 hard-cooked egg, sliced (2 if you wish) |
barbecue salad dressing ingredients |
1/2 cup mayonnaise |
1/4 cup prepared barbecue sauce (your favorite) |
1 tbsp instant minced onion |
1 tbsp lemon juice |
1/2 tsp salt |
1/4 tsp pepper |
Directions:
1. First, make dressing so it can chill. Mix together all dressing ingredients, cover and put in refrigerator. 2. A few minutes before you wish to serve, tear washed lettuce into bite size pieces. You should have about 6 cups (in case you want to substitute a different kind of lettuce-I'm partial to the dark lettuces.) 3. Break bacon into large pieces (don't crumble). 4. Cut each tomato into 8 wedges. 5. Add bacon, tomatoes and chicken to lettuce in serving bowl. 6. Toss with your chilled dressing. 7. Garnish with egg slices. |
