Chicken Black-Eyed Peas Casserole |

This is a very tasty quick and easy one-dish meal. Ingredients:
4 -6 boneless skinless chicken breasts |
2 (15 1/2 ounce) cans black-eyed peas |
1/2 cup sliced onion (and or garlic) |
all purpose greek seasoning |
8 ounces smoked sausage, sliced |
Directions:
1. Season chicken with Greek seasoning or salt and pepper. Place in baking dish layered with onions. 2. Pour over the undrained blackeye peas and sliced smoked sausage. 3. Sprinkle again with Greek seasoning and more onion if desired. 4. Bake, covered at 350 degrees for 45 minutes or longer. 5. Note: The smoked sausage is optional. |
