An extremely pretty salad packed with berries, and chicken. Top it off with a mouth-watering honey mustard dressing and you have a salad everyone will enjoy. Ingredients:
1 pound chicken breast halves, skinless and boneless |
8 cups mixed salad greens |
1 cup fresh strawberries, sliced |
1/2 cup fresh blueberries |
1/2 cup fresh raspberries |
8 oz sugar snap peas |
1 (.75 ounce) package salad dressing mix, honey mustard variety |
1/4 cup cider vinegar |
2 tbsp orange juice |
1/2 cup vegetable oil |
1/2 cup toasted pecans |
Directions:
1. Make the dressing following the package directions, using oil and vinegar. Use the orange juice instead of the water then set aside. 2. Preheat the grill at a high heat. 3. Oil the grill grate, lightly and grill the chicken 6-8 minutes on each side, (until juices run clear) Remove from the heat, cool, and cut into strips. 4. Combine the chicken, salad greens, strawberries, blueberries, raspberries, peas, and pecans. Add in the dressing, and toss to coat well. |
