YUMMY!! want to try this one myself! Ingredients:
4 chicken breasts, skinless & boneless |
1 teas. salt |
1/4 teas. pepper |
3 tbs. flour |
1/4 cup vegetable oil |
1/3 cup green onions, chopped |
1/2 cup celery, chopped |
1 cup onion, chopped |
1 cup okra, sliced |
1 cup tomatoes, crushed |
12 oz. can beer |
1 tsp cajun seasonings |
rice |
Directions:
1. Cut chicken into pieces. Combine salt, pepper and flour. Dredge chicken in seasoned flour, shaking off excess and reserving flour. Brown chicken in oil about 3-5 minutes per side until golden. Remove chicken pieces. Turn heat down to medium and add green onions, celery and onion to skillet drippings. 2. Cook 5 minutes. Add reserved seasoned flour and continue to cook 3. 5 minutes. Add remaining ingredients and return chicken to skillet. Bring 4. to a simmer, partially cover and cook 35-40 minutes. Serve with rice. |
