Let no roast chicken die unloved. Great way to repurpose that left-over chicken into a fast fun meal. I was really pleased to find they freeze well so you can make them ahead and take them to work for a blast in the microwave at lunch time. Ingredients:
2 english muffin |
8 oz chicken: breast, skinless, roasted |
1/4 cup hickory smoke barbeque sauce |
1 cup shredded wisconsin extra sharp cheddar |
12 kosher dill pickle chips |
Directions:
1. Split the English muffins in half and toast them 2. Chop the chicken and put it in sauce pan to heat mixing in the BBQ sauce. Heat thoroughly. 3. Top each muffin half with dill pickle chips, bbq chicken and then with the shredded cheese. 4. Serving suggestions: cole slaw and orange wedges. 5.
