This recipe is quick, easy and tasty!! The chicken and sausage together make the flavor pop! I asked my friend for the recipe after she had prepared it for a couple functions she catered. It's great for parties or large family get togethers!! And so easy!! Ingredients:
4 chicken thighs, with skin |
chicken seasoning, to taste (i use mccormicks) |
4 hot italian sausage links |
1 large onion, cut into large chunks |
1 large bell pepper, cut into large chunks |
4 medium potatoes, peel and cut into large chunks |
2 large carrots, peel and cut into large chunks (optional) |
1 (14 1/2 ounce) can diced tomatoes |
olive oil |
sage, to taste |
oregano, to taste |
Directions:
1. Sprinkle chicken thighs with chicken seasoning. 2. In large skillet brown Italian sausage with a little olive oil. 3. Add chicken and sear skin to brown. 4. Drizzle olive oil into a 13 x 9 baking pan. 5. Place chicken and sausage in pan. 6. Throw onions, peppers, potatoes and tomatoes over and around the chicken and sausage. 7. Drizzle with a little more olive oil. 8. Sprinkle with desired amount of sage and oregano. 9. Cover very tightly with foil. 10. Bake 425 for 1 1/2 hours. |
