Chicken & Asparagus Rotini |

Better cold (cool for several hours). Sprinkle with goat cheese or feta if desired. serving size is ~ 2 cups. Ingredients:
8 ounces whole wheat rotini pasta, uncooked |
1 pound chicken breast, diced |
1/2 tsp salt |
1/2 tsp black pepper |
1 cup asparagus, sliced |
2 cups cherry tomatoes, halved |
2 garlic cloves, minced |
2 tbsp basil, fresh and chopped |
2 tbsp balsamic vinegar |
1 tbsp olive oil, extra virgin |
Directions:
1. Cook pasta according to package directions, omitting salt and fat. 2. Heat a large nonstick skillet over medium-high heat & coat with Pam or use a little oil. 3. Sprinkle chicken with salt & pepper then saute. 4. Add asparagus to pan; saute 5 minutes. 5. Add tomatoes and garlic to pan; saute 1 minute. 6. Remove from heat. Stir in pasta, basil, vinegar and oil. |
