I made this tonight. It was fun, simple and doesn't look like a casserole. The broth makes the chicken juicy and tender. Not only are the artichokes and mushrooms delicious, they make the dish appear like something one might order in a restaurant or fix for company. Read more . Southern Food. Ingredients:
4 chicken breast halves, boneless, skinned |
4 tbl. butter |
8 ounces sliced mushrooms |
1 jar (14 oz.) marinated artichokes, drained |
2 tbl. flour |
1 1/2 c chicken broth (i use the light, fat-free, 50% less sodium broth) |
Directions:
1. In a skillet, brown chicken lightly in the butter. 2. Transfer the chicken to a baking dish. 3. Add mushrooms to skillet and saute for a few minutes, until lightly browned; remove and spoon over the chicken pieces. 4. Place drained artichoke hearts on the chicken pieces. 5. Add flour to the remaining butter and stir (or whisk) to blend. 6. Add broth and cook until thickened; pour over chicken. 7. Bake the casserole at 350 degrees for 45 minutes (or less if chicken is done.) |
