I really enjoyed this, i loved all the flavors. I coulndnt find the cheese slices so i just used 6 ounces of the part skim mozzarella shredded (same points) and it worked really well. i actually think next time i will use less cheese as it was almost too cheesey(if thats possible). I also think that the chicken by itself is great. it would make a great breaded chicken tender to dip in . whatever you want. if you eat those by themself and divide the 16 ounces of chicken into 8 servings, they would be 4 points per serving. :) enjoy. Ingredients:
8 ounces fresh mushrooms, sliced |
16 ounces boneless skinless chicken breasts, cut into thin strips |
1/2 cup liquid egg substitute |
1 cup dry breadcrumbs |
2 tablespoons light margarine |
6 ounces fat-free mozzarella cheese slices |
3/4 cup fat-free chicken broth |
8 ounces egg noodles |
Directions:
1. Place half of the mushrooms in a 13x9x2 baking dish. Dip chicken in egg substitute; roll in bread crumbs. In a skillet, melt the margarine over medium heat. Brown chicken on both sides; place on top of mushrooms. Arrange remaining mushrooms over the chicken; top with cheese slices. Add broth to pan. Bake at 350° for 30-35 minutes. While chicken is cooking, boil noodles according to package directions, omitting oil and salt. Drain. Serve chicken over hot noodles. |
