Chicken and Wild Rice Casserole |

I put this together using ingredients I had on hand. I served it with green beans with almonds and crescent rolls. My family thoroughly enjoyed it. You can use cooked chicken from a previous meal if you have some on hand, but this was a day before grocery day. Ingredients:
1 (6 ounce) box uncle ben's chicken-flavored wild rice |
1 tablespoon butter |
2 1/3 cups water |
1 (10 1/2 ounce) can condensed cream of chicken with herbs soup |
1/2 cup skim milk |
1 (12 ounce) can chicken |
1/4 cup parmesan cheese |
Directions:
1. Preheat oven to 375. 2. Combine 1st 3 ingredients in a microwave safe casserole dish. Cook according to package directions. 3. Crumble chicken over cooked rice and then add the milk and soup. Stir to combine. 4. Bake uncovered for 20 minutes. 5. Add parmesan cheese and return to oven set on broil long enough to heat the cheese (it takes 3 minutes in my oven). |
