Chicken and White Bean Chili |

Threw this together on a day stuck at home in the snow. Ingredients:
1 tablespoon olive oil |
1 medium onion, chopped |
1 garlic clove, minced |
1 medium green pepper, chopped |
1 lb chicken breast, diced |
1 teaspoon salt |
1 tablespoon adobo seasoning |
1 tablespoon chili powder |
1 (28 ounce) can tomatoes in puree |
1 (15 ounce) can small white beans |
Directions:
1. Saute the onion, garlic and pepper in oil until softened. Add chicken and cook until white on all sides. Add salt, Adobo, and chili powder and stir, cooking another minute or so. While chicken is cooking, dice the tomatoes, and then add to chicken mixture. Drain and rinse beans, add. Simmer until flavors meld and meat is fork tender, about an hour. |
