Chicken And Tortellini Soup |

Great for those cool autumn nights or when your short on time! Ingredients:
1 tablespoon oil - olive or canola |
2 celery stalks, chopped (no leaves) |
1/2 cup carrot, grated |
7 cups chicken broth (i prefer low-sodium) |
12 oz. package frozen tortellini |
2 cups cooked chicken, shredded |
salt and pepper to taste |
parmesan, grated (optional) |
Directions:
1. In large stockpot, heat oil and saute celery and carrot for a few minutes. 2. Stir in broth and turn up heat to bring to a boil. 3. Add tortellini and cook until soft. 4. Stir in chicken and cook until heated. 5. Add salt and pepper, sprinkle with grated parmesan. 6. Serve with crusty Italian bread and salad. |
