Chicken and Stuffing Florentine |

Florentine refers to the spinach which is added to this recipe. It is a welcome addition, adding color and pizzazz. You could use 3 cups chopped fresh spinach instead of the frozen, if you wish. Recipe is from the Stove-Top people. Ingredients:
2 cups stove top stuffing mix, for chicken in the canister |
1 cup hot water |
1/4 cup parmesan cheese, grated |
4 small boneless skinless chicken breast halves (1 lb.) |
1 (10 3/4 ounce) condensed cream of chicken soup |
1 (10 ounce) package frozen chopped spinach, thawed, well drained |
Directions:
1. Preheat oven to 400 degrees F. 2. Mix stuffing mix, hot water, and cheese just until stuffing mix is moistened. 3. Place chicken in a 13 x 9 baking dish. Mix soup and spinach; spoon over chicken. Top with stuffing mixture. 4. Bake 30 minutes or until chicken is done. |
