A variation of a chicken and spinach recipe I found on this Web site. I added mushrooms, onion, and olives, and also increased the servings. Ingredients:
2 1/2 pounds chicken breasts |
1 package frozen spinach |
2 1/2 cup egg substitute |
1 tbsp garlic powder |
1 tbsp italian seasoning |
1/3 cup grated parmesan cheese |
4 ounces mushrooms |
1/2 cup onion |
2 1/4 ounces black olives |
Directions:
1. Chop and cook chicken breasts. Preheat oven to 350 degrees F. 2. Mix spinach, mushrooms, onions, garlic powder and italian seasoning in a 9x13 baking dish. 3. Add chicken breasts when cooked and stir everything together. 4. Pour egg substitute over the top of the spinach/chicken mixture and spread evenly. Sprinkle parmesan cheese over all and spread olives on top. 5. Bake at 350 degrees for 55-65 minutes until the eggs are set and the cheese is browned. Makes 12 servings. |
