This is a recipe I got from my mom, I have no idea where she got it. I have made this several times and it's always delish. If you look at what scampi is, it's shrimp, so when people say they want shrimp scampi they're being redundant....I hope you'll try this and let me know how you like it. Ingredients:
3 lbs chicken |
1 tablespoon salt |
1/2 teaspoon pepper |
1/4 cup butter |
1/4 cup olive oil |
1 large onion, chopped |
3 garlic cloves, pressed |
3 tablespoons parsley |
3/4 cup port wine |
1 cup tomato sauce |
1 tablespoon basil |
1 lb peeled shrimp |
Directions:
1. Cut chicken into separate pieces, rub with salt and pepper. In butter and olive oil, saute pieces of chicken, then add chopped onions and pressed garlic, port wine, tomato sauce, basil. Cover and cook for 30 min or until chicken is done. Before serving add shrimp, cook for 3 to 4 minute. 2. We serve this with steamed basmati rice. it's very yummmeeeee. |
