Simple, healthy chicken dinner Ingredients:
1/2 cup low fat mozzarella shredded |
1 lb chicken tenders |
1/2 lb asparagus |
1/2 cup reduced sodium chicken broth |
1/2 cup chopped tomatoes |
1 clove garlic |
1/2 cup onion, chopped |
2 tsp balsamic vinegar |
7 oz roasted red peppers |
Directions:
1. Cook chicken and onion in skillet until almost done. Add chicken broth, garlic vinegar, asparagus and roasted red peppers. 2. Add tomatoes 3 minutes before chicken is fully cooked. Top with mozzarella. |
