Delicious Chicken, Vegetable and Rice soup made with brown rice. Ingredients:
2 cups chicken breast, chopped |
1/2 cup chopped onion |
1/2 cup chopped celery |
1/2 cup chopped mushrooms |
4 carrots, sliced |
5 cups chicken broth |
1 1/2 cups brown rice |
3 cups water |
1 tbsp olive oil |
Directions:
1. Dice chicken breast meat into bite size chunks. Add 1 Tbsp olive oil to bottom of stock pot - set heat to medium high. When pan is hot, add chicken breast chunks and saute until no longer pink. Add onion, celery, mushrooms and carrots and saute for another 5 to 10 minutes until onions are transluscent. Add chicken broth and water and bring to a boil. Season with salt, garlic pepper, and thyme. Add rice and boil for about 45 minutes. Serve with crackers or just plain. |
