1 package spanish rice |
2-3/4 cups water |
2 cups chopped cooked chicken |
16 ounce can pinto beans rinsed and drained |
16 ounce can tomatoes or stewed tomatoes undrained |
1 medium green bell pepper cut into 1/2-inch pieces |
1-1/2 teaspoons chili powder |
1 teaspoon ground cumin |
1/2 cup shredded pepper jack cheese |
sour cream |
chopped cilantro |
Directions:
1. In a 3-quart saucepan combine rice mix, special seasonings, water, chicken, beans, tomatoes, green pepper, chili powder and cumin. 2. Bring to a boil then reduce heat to low and simmer uncovered for 20 minutes stirring occasionally. 3. Top with cheese sour cream and cilantro. |
