family recipie Ingredients:
2 cups cooked rice |
2 cups shredded monterey jack cheese |
1 1/2 cups chopped cooked chicken (if using canned-drain well) |
1 (12 ounce) can evaporated milk |
1/2 cup finely chopped red onion |
2 large eggs, lightly beaten |
1/4 cup chopped fresh cilantro |
2 tablespoons butter, melted |
Directions:
1. preheat oven to 350. 2. lightly grease 2qt casserole dish. 3. combine rice, cheese, chicken, evaporated milk, onion, eggs, butter,cilanro, in prepared dish stir well. 4. bake at 350 for 60-70 minutes or until knife inserted in middle comes out clean. |
