This is one of my lower calorie meals. It has very simple ingredients and flavors. This makes 2 huge servings. Ingredients:
1 small onion, thinly sliced |
1/2 cup basmati rice |
1 tbsp olive oil |
1 chicken breast, sliced |
1 1/4 lb broccoli cut in small pieces |
2 cloves |
salt and pepper |
1/4 cup reduced fat sour cream |
Directions:
1. Heat the oil in a non-stck pan. Add the onion, salt and pepper (to taste) and cook until tender. 2. Add the chicken, rice and cloves and ccok until the chicken turns white. 3. Add 1 cup of water and bring to the boil. Add the rice and put the broccoli on top. Cover, reduce heat and simmer 20 minutes. 4. Stir everything together and simmer another 5 minutes or so until the broccoli is done how you like. 5. Add the reduced fat sour cream and mix thoroughly. Remove cloves. Correct seasoning. Serve |
