Satisfying, low calorie one-dish meal Ingredients:
2 tbsp olive oil |
2 cloves garlic |
1/2 tsp salt |
1 tsp pepper |
1 lb potatoes, cubed |
1 lb chicken, cubed |
4 cups broccoli |
1 cup bell pepper |
Directions:
1. Heat olive oil in large skillet over medium heat. 2. Add potatoes and garlic, cover, and saute for about 5 minutes. 3. Add seasonings and chicken. Cook, covered, until chicken is done, about 10-15 minutes. 4. Add vegetebles. Cover and cook until potatoes are tender, about 15 minutes. 5. You can add whatever seasonings you prefer. I added some red pepper flakes during cooking, then a dash of balsamic vinegar when it was done. |
