Light, refreshing salad Ingredients:
1 cup mayonnaise |
1/3 cup mango chutney, chopped |
1/4 cup fresh lime juice |
2 teaspoons grated lime zest |
1/2-1 teaspoon curry powder |
1/2 teaspoon salt, to taste |
4 cups diced cooked chicken breasts |
1/2 cup fresh pineapple chunk |
1/2 cup thinly sliced green onion |
1/4 cup dried cranberries |
butter lettuce leaf, for lining plates |
1/2 cup slivered almonds, toasted |
Directions:
1. In a bowl, combine the mayo, chutney, lime juice, lime zest, curry powder, and salt. 2. In the same bowl, mix the chicken, pineapple, onions, and cranberries with the dressing. 3. Divide mixture evenly among 6 lettuce-lined plates and sprinkle with almonds. |
