Chicken And Peanut Pasta Salad |

A really delcious summer salad. Ingredients:
1 lb spiral pasta cooked |
1 cup frozen green peas |
1/2 cup chunky peanut buttter |
1/3 cup sour cream |
1 to 2 tsp hot sauce ( may be optional ) |
1 tbs vinegar |
2 tbs fresh grated ginger |
1/3 cup orange juice |
salt and pepper to taste |
3 cups cooked chopped chicken |
2 large carrots diced |
3 scallions chopped |
Directions:
1. Cook pasta, drain and cool. 2. n blender add peanut butter, sour cream, ginger, hot sauce, vinegar, orange juice, and blend smooth 3. season to taste. 4. If mixture is too thick, add more orange juice. 5. In large bowl, combine chicken, carrots and peas and pasta. 6. Slowly mix in the peanut dressing and toss lightly to coat well. 7. Garnish with scallions |
