Chicken and Pasta with Spinach and Tomatoes |

Fast and Easy chicken dish with Spinach and no salt diced tomatoes served over whole wheat pasta. Ingredients:
8 oz boneless, skinless chicken breast |
227 grams diced tomatoes |
227 grams mushroom stems and pieces,drained |
255 grams raw spinach |
1/2 tsp crushed red pepper flakes |
1 tsp dried basil |
112 grams penne pasta (1 3/4 cups dry) |
Directions:
1. Cut chicken into 1.5 x3 inch pieces. (Or use Purdue chicken tenderloins). 2. Brown in Pam. 3. Add the cans of unsalted diced tomatoes and drained mushrooms, basil and pepper flakes. 4. Simmer, covered, for 15 minutes. 5. Cook pasta according to package direction. 6. Add spinach to chicken and tomatoes, cook for about 2 minutees until wilted. 7. Serve over drained pasta. 8. Sprinkle with pinch of grated parmesan cheese (optional) |
