Chicken and Olive One Pot Roast |

The tomatoes, onions and beans all create a lovely sauce for the chicken. Ingredients:
2 tablespoons olive oil |
2 red onions, peeled and sliced |
10 ounces cherry tomatoes |
4 garlic cloves, peeled |
4 boneless skinless chicken breasts, cut into 3 pieces |
14 ounces cannellini beans |
2 ounces black olives |
1 lemon, zest |
2 tablespoons parsley, chopped |
Directions:
1. Heat the oven to 350°F. 2. Place half the oil, the onions, tomatoes and garlic in a roasting tin and cook in the oven for 15 minutes. 3. Fry the chicken in the rest of the oil for 2-3 mins until golden. 4. Add to the onions, cook for 10 mins then add the beans, olives and zest. 5. Return to the oven for 5 minutes. 6. Serve sprinkled with parsley. |
