Chicken and Mushrooms in Creamy Sauce |

This chicken dish is simple and very filling. It is perfect for anytime of the year. It is especially good served with a 1/3 cup of long grain and wild rice or green beans and a green salad. Ingredients:
1/2 pound mushrooms, sliced |
1/2 cup green onions, chopped |
1/2 cup water |
2 tbs cornstarch |
1/2 cup fat free yogurt |
3 tbs fat free chicken broth |
1 tsp chicken bouillon |
1/2 tsp pepper |
20 oz. chicken breasts, cubbed |
Directions:
1. Stir 1/4 cup of water and cornstarch until smooth. 2. Stir in yogurt, remaining 1/4 of water, mushrooms, onions, pepper, broth, and bouillon. 3. Cook chicken breast that are cut into 3rds in a sauce pan for about 12-15 minutes or until there is no pink left. 4. Add the mushroom sauce and heat on a medium heat for another 5 minutes. |
