Chicken and Mushrooms

Ingredients:
1 tablespoon olive oil
2 garlic cloves, minced
2 cups sliced mushrooms
4 scallions, sliced
1/2 teaspoon salt
1/2 teaspoon pepper
1 lb boneless skinless chicken breast, but in 1/2 inch pieces
1 1/2 tablespoons low sodium soy sauce
1 tablespoon rice vinegar
1/2 cup chopped fresh cilantro
Directions:
1. Heat oil in a medium size skillet over medium heat.
2. Add garlic to pan and cook 1 minute.
3. Stir in Mushrooms, scallions, 1/4 tsp salt and pepper.
4. Cook 3 minutes stirring often.
5. Reduce heat to medium.
6. Add chicken pieces to pan and sprinkle w/remaining salt and pepper.
7. Cook, stirring for 4 minutes or until cooked through.
8. Stir in soy sauce, vinegar and cilantro.
9. Cook 2 minutes.
10. Serve.
