Chicken and Mushroom Tart |

Celia Goodrick-Clarke's Cheat's Cuisine. An article from years ago. I haven't tried this - yet! Ingredients:
250 g puff pastry |
1 small egg, beaten |
50 g butter |
225 g mixed mushrooms |
350 g cooked chicken, cut into bite-sized pieces |
150 ml condensed mushroom soup |
150 ml dry white wine |
3 tablespoons chopped chives or 3 tablespoons spring onions, green tops |
Directions:
1. Roll out the pastry on a floured surface to make an oblong. 2. Neaten the edges, brush with egg and fold in the edges (trim the corner) and score. 3. Bake for 25-30 minutes at 200C/400°F The centre will rise, but will flatten when filling is added. 4. Meanwhile melt the butter and fry the mushrooms until soft. 5. Stir in the chicken, the soup, the wine and most of the chives. 6. Season, bring to the boil and simmer for 5 minutes until hteated through. 7. Pile into the pastry case, sprinkle with the remaining chives and serve. |
