a simply wonderful soup anytime of the year Ingredients:
1/2 lb mushrooms |
1/4 cup each: onion, carrots, celery chopped |
1/4 cup butter |
1/2 cup flour |
5 1/2 cups chicken broth |
1 tsp pepper |
1/4 tsp dried thyme |
pinch dried tarragon |
1 tsp hot ppeer sauce ( optional ) |
3 cups cream or half and half |
2 1/2 cups cooked chicken cubed |
1 tbs chopped fresh parsley |
1 1/2 tsp lemon juice |
1/2 tsp salt or to taste |
Directions:
1. Saute mushrooms and vegetable in butter until softened and tender 2. Stir in flour to blend. 3. Add broth and seasonings and stir well. 4. Bring to a boil then simmer , stirring uncovered 10 minutes. 5. Stir in the cream, chicken, parsley, lemon juice and salt and simmer through - do not let boil |
