CHICKEN AND MANDARIN ORANGE SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Perry Estate in Allen, Texas in 1988. Ingredients:
1 cup mayonnaise |
1/4 cup lime juice |
1/4 teaspoon ground nutmeg |
4 cups cooked chicken cubed |
11 ounces mandarin oranges |
1 cup seedless green grape halves |
3/4 cup celery chopped |
1/2 cup almonds slivered and toasted |
Directions:
1. Drain oranges then in large bowl combine mayonnaise, lime juice, salt and nutmeg. 2. Stir in remaining ingredients and mix well then chill and serve on lettuce leaves. |
