main meal soup. filling and comforting. usually make it for bonfire night celebrations, or to cheer everyone up in the winter. have it with good crusty seedy bread, Ingredients:
3lb skinless (optional) chicken thighs (bone in) |
2 onions peeled and roughly chopped |
2 carrots peeled and roughly chopped |
2 celery sticks roughly chopped |
1 bay leaf |
2 ltrs water |
1 oz butter |
900g leeks trimmed and sliced |
salt and black pepper to taste |
Directions:
1. place the chicken thighs in a saucepan just big enough, so they fit snugly 2. add the chopped onions, celery, carrots and bay leaf 3. add the water and bring to the boil. reduce heat and simmer gently for 1 hour 4. melt the butter in a frying pan, add the leeks and gently fry for 10 minutes. 5. remove the chicken thighs from the pan and strip the meat from the bones. 6. place the chicken back in saucepan, add seasoning at this stage. 7. add leeks to saucepan and simmer for 10-15 minutes more. 8. serves 8 as a starter, but hearty enough to serve 4 as a main meal. |
