Chicken and Italian Sausage Bake |

This creamy, flavourful recipe is a great one-dish meal that can be prepared in advance for a quick weeknight meal. Ingredients:
1 tablespoon olive oil |
1/2 cup celery (chopped) |
1/2 cup onion (chopped) |
2 italian sausages (sliced) |
425 g cream of mushroom soup |
2 chicken breasts (cooked and cubed) |
2 cups wild rice, i prefer to use a package of uncle ben's fast and fancy (cooked) |
1/2 cup grated parmesan cheese |
Directions:
1. Heat the olive oil in a large skillet. Saute celery and onion until soft, about 5-7 minutes. Add sausage to skillet and continue cooking until sausage is cooked through. 2. Add cream of mushroom soup and stir and cook for another 3 to 5 minutes. 3. Place the chicken in a casserole dish evenly. Next, layer the sausage mixture over it. Then top with the wild rice. 4. Bake in a 375 degree oven for 15 minutes. 5. Sprinkle the parmesan on top and continue baking for the final 5 minutes. Enjoy! |
